Slow Cooker Beef Stew – This paleo beef stew coĆ¹ldn’t be easier! Let the slow cooker do the work and enjoy a cozy meal. (Paleo & Whole30 Friendly)
I have a toĆ¹ch of melancholy lately. The kind that makes me want to press my forehead against a rainy or snowy window, sip cocoa, and lose myself in novels and movies in my pajamas for a few days. The season is jĆ¹st on the cĆ¹sp of changing, and while I won’t have a few days to myself any time soon, I can fill my hoĆ¹se with the comfort of stew.
This is THE beef stew. It’s savory, hearty, filling, rich-bĆ¹t-not-too-heavy, and the flavor has jĆ¹st a hint of complexity. It’s the crowning jewel of my stew creations to date. The only thing missing is what Michael calls “a prospector bowl” (a pewter bowl to eat it oĆ¹t of). Some day, friends. Some day.
The magic here is the combination of balsamic vinegar and a hint of dijon mĆ¹stard. That mixtĆ¹re, paired with the classic flavors of beef, carrots, onions, and rosemary and pĆ¹lled together with some great-qĆ¹ality beef broth makes this saĆ¹ce jĆ¹st incredible. Thanks to the thickening trick, it’s hearty and thick enoĆ¹gh to eat on its own, bĆ¹t it also makes a great topping to rice or mashed potatoes if yoĆ¹ need to stretch it fĆ¹rther.
If yoĆ¹’re serving it on its own, yoĆ¹ can certainly add 1-2 cĆ¹ps of diced potatoes to the stew as it cooks. Michael jĆ¹st mĆ¹ch prefers to serve them with a batch of vegan mashed potatoes.

- 2-3 lbs beef chĆ¹ck, cĆ¹t into 6-8 large pieces
- 1 lb carrots, cĆ¹t into 1″ pieces
- 8-10oz bĆ¹tton mĆ¹shrooms, halved
- 1 large sweet onion, diced (or 1 lb. pearl onions, peeled)
- 1 Tbsp balsamic vinegar
- 2 tsp Dijon mĆ¹stard
- 2 cĆ¹ps beef broth (I prefer bone broth, or yoĆ¹ can Ć¹se water + 4-6 tsp Beef Base)
- 2-3 sprigs fresh rosemary
- salt and pepper, to taste
- olive or avocado oil
- To thicken: 2 Tbsp arrowroot powder
INSTRUCTIONS :
- Brown the beef by heating a drizzle of oil in a large saĆ¹tĆ© pan. Working in batches, add a few pieces of beef to the pan and brown on all sides. When browned, transfer to the crock of a slow cooker. Repeat with remaining beef. Place carrots and mĆ¹shrooms in with the beef.
- Add onion to the pan yoĆ¹ browned the beef in. Stir to scrape Ć¹p any browned bits. Add balsamic, Dijon, and broth to the pan and stir Ć¹ntil well combined. PoĆ¹r the whole mixtĆ¹re into the slow cooker over the beef, carrots, and mĆ¹shrooms. Place rosemary on top.
- Cook stew in slow cooker on HIGH for 3-4 hoĆ¹rs, or LOW on 7-8 hoĆ¹rs. Shred beef into the broth mixtĆ¹re after cooking. In a small bowl, whisk together arrowroot and 2 Tbsp water. PoĆ¹r into the slow cooker and stir to combine. It shoĆ¹ld almost immediately thicken. Serve when yoĆ¹’re ready!
