Snappy + EASY MEXICAN SHRIMP SKILLET 

I trust you had an exquisite end of the week! 

We played outside throughout the day Saturday – biking/strolling on the scenic route and planting in the patio nursery (yippee for Earth Day), which was blessed in light of the fact that Sunday was a cold and crisp chaos of multi day. 

My better half took the children out in their overcoats at one point to sprinkle and play and simply get some natural air. 

I had a huge amount of work I'd intended to do yet simply wasn't feeling it. We as a whole wound up twisting up on the lounge chair together toward the evening to watch a film. It was kinda decent 💕 

Today however, I have Cinco de Mayo at the forefront of my thoughts. 🎉💃🍹 

It falls on a Friday this year which implies there's space for every one of the margaritas and celebrating! 

I may attempt this blackberry lemonade margarita to begin us off, nearby my stacked southwestern hummus and perhaps this triple layer Mexican gathering plunge. I think these Instant Pot refried beans seem like a triumphant side and I may need to complete off the night with this scratch made rum cake. 😋 

Once in a while for occasions this way, I need to be bubbly yet you realize I constantly skew basic. What's more, quick. What's more, healthyish.

INGREDIENTS : 
  • 2 teaspoons extra-virgin olive oil
  • 1 small onion, chopped
  • 1-2 small jalapeno peppers, seeded and finely chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/4 lbs. shrimp, peeled and deveined

FOR SERVING:
  • Chopped fresh cilantro
  • Squeeze of fresh lime juice

INSTRUCTIONS : 
  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and peppers and sauté 5-7 minutes, until tender.
  3. Add garlic and seasonings and sauté an additional 30 seconds.
  4. Add shrimp to pan in an even layer and cook 1-2 minutes per side, until just cooked through.
  5. Remove and serve sprinkled with fresh cilantro and a squeeze of lime juice.
